Organic foods 101
Once found only at local farmers markets and specialty stores, organic foods
have become a staple on the grocery aisle. But what exactly does organic mean? Certified Natural Chef Hillori Hansen
from Whole Foods Market in Fresno weighs in on this hot topic.
Q
What does organic mean?
A
Organic food is produced
without using most conven-
tional pesticides, fertilizers made
with synthetic ingredients, geneti-
cally modified organisms, bioengi-
neering or ionizing radiation. Before
a product can be labeled organic,
a government-approved certifier
inspects the farm where the food
is grown to ensure the farmer is
following all the rules necessary to
meet USDA organic standards.

I hear lots of terms related to
organic foods. For instance,
grass-fed. What does this mean?
A
Grass-fed beef primarily comes
from animals foraging on pasture
in a stress-free environment where ani-
mals grow at their own natural pace,
rendering the use of antibiotics or
added growth hormones unnecessary.
Pasture-fed beef means meat that is
lower in total fat, saturated fat, choles-
terol and calories. Grass-fed beef has
more vitamin E, beta-carotene, vitamin
C, and a number of health-promoting
fats, including omega-3 fatty acids and
conjugated linoleic acid, or CLA.

Are organic foods healthier?
A
Soil is the foundation of the
food chain. The primary focus
of organic farming is to use practices
that build healthy soils. Well-balanced
soils produce strong, healthy plants
that become nourishing food for peo-
ple and animals. Many farmers still
use organic practices but don’t have
the certified organic label, so organic
doesn’t always mean more nutritious.
Rather, organic foods are spared the
application of potentially harmful
long-lasting insecticides, herbicides,
fungicides and fertilizers.

a large spoon, gently mix the ingredi-
ents together until just combined –
do not overwork.
Have ready 4 long metal skewers.
Form the beef mixture into 8 short
sausage shapes and thread 2 onto
each skewer. Brush with oil and grill,
turning frequently, until browned
